Over the New Year period, your Chigwell, Loughton or Woodford kitchens will no doubt be seeing plenty of action. The humble roast potato is one of the best parts of any roast meal and central to a family gathering. Have you ever thought of getting the kids involved in turning your roast spuds into smiley faces to spread some New Year cheer? Smiley face roast potatoes are sure to go down a storm with the kids at any meal but they also make the perfect snack or side dish. To make 25- 30 smiley faced roast potatoes you will need Ingredients 800 g of Maris Piper potatoes, a teaspoon of salt, 5 tablespoons of breadcrumbs, 1 egg, 3 tablespoons of plain flour, 1 tablespoon of cornflour. To make first peel and boil the potatoes until soft then mash them and place them in a bowl. Combine the salt with the breadcrumbs and add to the mash then add the beaten egg and mix through to form a very wet dough. Sieve the flour and cornflour into the mix and use your hands to form a dough. If it is too wet add a little more flour. Finally, cover the dough and put it in the fridge for 30 mins or so. Pre-heat your Woodford, Chigwell or Loughton oven to 180 Ëšthen place a sheet of baking paper on a board and sprinkle a generous amount of flour on it. Roll out the dough to the thickness of a pound coin. Using a round cookie cutter cut out the circles and place on a baking tray lined with baking paper. Use a straw to make the holes for the eyes and a tablespoon to make the mouth.Place in the preheated oven for 20-25 minutes or until cooked and crispy.
